| 1 3⁄4 cup | AP flour |
| 1 tsp | salt |
| 1 tbsp | sugar |
| 3 tsp | baking powder |
| 6 tbsp + 2 tbsp | butter, diced and chilled |
| 3⁄4 cup | heavy cream |

| 3 cup | chopped fruit |
| 2⁄3 cup | sugar |
| 1 tbsp | flour |

For the dough, sift the dry ingredients together into a mixing bowl. Cut in the 6 tbsp butter, until the texture is coarse, then make a well in the center and pour in the cream. Knead until the dough just comes together.
Preheat oven to 425°F. Grease an 8"×8" baking dish. Combine the filling ingredients in a sauce pan and bring to a boil. Pour the filling into the baking dish. Tear off small balls of dough and cover the filling. Dot with the remaining 2 tbsp of butter. Sprinkle the top with cinnamon and coarse sugar (optional). Bake for 30 minutes.
Note: Almost any fruit works with this: peaches, apricots, plums, apples, pears, berries… You name it. A variation is to put the dough on the bottom and filling on top, or even to use half the dough on bottom and half on top.
