12 cupwarm water
1 tsp + 1 12 tspsugar
34 cupcold water
1 packageyeast
3 cupbread flour
1 cuppasta flour
34 tspsalt
13 cupolive oil

Mix the warm water, 1 tsp sugar, and yeast, and let stand for 5 minutes. In a mixer, or a food processor with a dough blade, add the remaining sugar, flours, and salt. Pulse the machine to mix. Let the processor run while pouring in the olive oil and yeats mixture. Now slowly add enough cold water to make the dough form a ball. Let the processor run for another minute.

Turn the dough out onto a floured work surface and knead by hand until it forms a tight ball. Place the ball in a lightly oiled bowl, and leave covered in a warm place to rise for 45 minutes. Remove the dough from the bowl, punch down, and knead again, then let rise a second time for at least 30 minutes.

Punch the dough down and roll or toss it to form a pizza crust. Add toppings and bake in a 425°F oven for 15–20 minutes.
