Serves 4.
| 2 tbsp | olive oil |
| 1 | medium onion, diced |
| 2 tsp | minced garlic |
| 28 oz | crushed tomatoes |
| 1 tsp | dried oregano |
| 1 tsp | dried basil |
| 1 | bay leaf, whole |
| 1⁄2 tsp | sugar |
| salt, pepper |
Over medium heat, heat oil in a large pot until hot. Add onion and garlic, and sauté for 3–5 minutes until the onions sweat. Add the tomatoes; stir to mingle the flavors. Stir in the herbs and bay leaves. Sprinkle in sugar, salt, and pepper. Lower the heat and continue to simmer for 30 minutes, uncovered. Stir occasionally. Check seasoning when done.
